
High Protein Breakfast Scramble
This breakfast is packed with protein and a perfect start to your busy day. I cooked this meal in less than 5 minutes, add in prep and cleanup, and your looking at 15 minutes in total! I hope you enjoy.
Ingredients
(100% organic products used in my recipe, not required in yours)
- 1 Tablespoon of Extra Virgin Olive Oil
- 2 Eggs
- 2 Uncured turkey breakfast sausages
- 2 Slices of uncured turkey bacon
- 1 Small handful of fresh spinach
- 1/2 Avocado (sliced)
- A couple of small sweet peppers
- A handful of chopped red onions handful of chopped green onions or scallions
- Celtic or pink himalayan salt & pepper to taste
- A drizzle of your favorite hot sauce (optional)
- A small bowl of your favorite mixed fruit as a side (we used mangos, blueberries, and strawberries in ours)
Directions
- Prepare your fruit bowl and refrigerate until your meal is ready to eat
- Drizzle some EVOO over a hot pan on medium- high heat
- Add your turkey sausages and bacon to the pan to cook (a couple min each side)
- Using the same pan add in onions, scallions or green onions, and sweet peppers with a pinch of salt and pepper, and saute for a couple of minutes (2-3)
- Scramble your two eggs, add in salt and pepper to taste, and add into the same pan to cook
- Serve in a bowl over a bed of fresh spinach
- Top with fresh avocado slices and drizzle with your favorite hot sauce (optional). In my bowl, I used a habanero hot sauce that I love!
- Don’t forget your fruit bowl from the fridge, and enjoy!
